Abstract

Meat processing plants are using computer imaging for quality assurance of meat products and foreign material detection
at line speed [1]. Multiple imaging systems, including x-ray, visual and hyperspectral systems can be used to interrogate
different aspects of product quality or composition. As an example, hyperspectral cameras can identify numerous visual
and chemical tissue characteristics to a pixel resolution down to 2mm [2]. However, imaging systems are not widely used
in antemortem inspection [3]. The digitization of carcass and offal health may enable higher confidence through traceable
and objective defect assessments [4].
Kidney cysts are the second most common disease disposition leading to bovine kidney tissue condemnation in abattoir.
Kidney cysts occur at rates up to 5% of carcasses [5]. Cysts are fluid filled voids that result in tissue condemnation. To
attenuate defect detection, we investigated the use of a commercially available hyperspectral imaging system, with
machine learning based model, to detect cysts efficiently in bovine kidney tissue.

We are pleased to welcome you to the 71st International Congress of Meat Science and Technology (ICoMST), which will be held at the Auditori Palau de Congressos of Girona (Spain) from 3rd to 8th August 2025. The city of Girona and its surroundings have plenty of places of natural, historical and cultural interest that will delight visitors. They will also be able to enjoy the country's rich and varied gastronomic tradition.

The last time ICoMST was held in our country was in 1998, when Barcelona hosted the congress.

ICoMST is the leading international congress in the field of Meat Science and Technology, held annually with over 600 participants from more than 30 countries. ICoMST is also a great opportunity for researchers and companies in the meat supply chain to discuss and exchange information and ideas on topics that are of interest to them, create networks and gain an enriching professional experience. This forum fosters the generation of new ideas, the acquisition of knowledge and opportunities for collaboration.

The exciting scientific programme is complemented by a social programme that will provide you with an unforgettable experience combining visits to emblematic sites, tasting of local gastronomy and technical insights into local industry. Non-delegates will also have the opportunity to explore and enjoy the region.
