Abstract

The researchers describe a bottle storage experiment that assessed the changes in the forms of copper in Chardonnay and Pinot Grigio wines during a 12-14 month period. By measuring the decay rate of the active copper fractions, it was possible to identify the period over which the occurrence of sulfidic off-odour could be inhibited.
